1.Dice the courgette/zucchini and onion into 1cm pieces. 2.Finely chop the garlic 3.Place the chopped vegetables and spices in a pan and top up with hot vegetable stock. 4.Boil on the stove for approximately 15 minutes until the vegetables are tender 5.Blend all ingredients together and season to taste 6.Enjoy this soup immediately on its own or with some low fat water crackers
