1. Heat the butter in a griddle pan and lightly grill the courgette, aubergine, cherry tomatoes and red peppers or place all vegetables under the grill and drizzle with butter.
2. Meanwhile, prepare the pasta according to the packet's instructions and drain.
3. Once the vegetables are cooked, mix them with the pasta and chunks of green apple.
4. Toss with a dressing of your choice.
