1. Place the mushrooms bottom up in a large baking tray and dot half the butter and season well with salt and freshly ground black pepper.
2. Cook at 180°c/350F for 10 minutes until the mushrooms are tender.
3. Drain the excess juices from the mushrooms and pat the mushrooms dry and slice.
4. Put your toast on and begin to prepare the Garlic mushrooms.
5. Pan fry the mushrooms in 50g of butter on a medium heat with an extra splash of olive oil for approximately 3 minutes and then add the garlic and continue to cook for another few minutes being careful not to let the garlic burn.
6. Season the mushrooms well with sea salt and freshly ground black pepper and add the chopped parsley.
7. To serve, place 3 mushrooms onto the freshly buttered toast and serve immediately.
Chef tip
Try adding a few rashers of finely chopped smoked bacon at stage 5 for a delicious alternative
