1. Season shrimp with salt and pepper.
2. In a wok or large skillet, heat 1 tablespoon of the vegetable oil over high heat and cook shrimp approximately 30 seconds on each side.
3. Remove shrimp from pan and set aside.
4. Reduce heat to medium and add mushrooms to oil.
5. Cook for 1 minute stirring frequently to coat the mushrooms in oil.
6. Add onions, carrots, and peas.
7. Cook until carrots are somewhat tender.
8. Stir in rice and cook for 1 minute.
9. Push shrimp fried rice mixture to the side of the skillet and heat remainder of the vegetable oil in the skillet.
10. Pour in eggs, and stir constantly to cook the eggs.
11. Stir eggs into the rice mixture.
12. Add soy sauce and pepper to taste.
13. Cook and stir until the shrimp fried rice is heated through.
